What this is

Wulfbear is the bakery branch of Tusky Farms. We pop up Saturday and Sunday mornings at a gas station in Niagara County. We sell donuts by the box, pastries by the box, and bread by the loaf. There is no single-donut order. The basic glazed is inside the gas station, twenty feet away.

We fry our donuts in duck fat. We mix our brioche with duck eggs. We bake our bread with flour from upstate New York and butter from cows you can drive out and meet. The signature donut is The Mallard. The hero is Brown Butter. The pastry box is baker's choice — cookies, blondies, brownies, lemonies, whatever else the oven turned out that morning.

The Mallard

A brioche donut made with duck eggs and fried in duck fat. Deeper gold than any donut you've had. A brown-butter-and-yolk glaze. A flake of Maldon.

One per box, every box. Never sold alone.

INGREDIENTS

Duck eggs, flour, butter, milk, sugar, salt, yeast.

Glaze: brown butter, duck yolk, confectioner's sugar, flake salt.

FRIED IN

Rendered duck fat. All our donuts are.

The Hero

Brown Butter

Year-round. The butter, browned to amber. The brioche, gold from the egg yolks. The glaze, set with a flake of Maldon on top.

That's it. Most people order three.

We pick, you eat. Six or twelve of whatever cookies, blondies, brownies, and lemonies came out of the oven that morning. Sometimes shortbread. Sometimes a one-off we wanted to try.

Sold By The Unit

Cake

Three at a time. Chocolate. Lemon. Whipped-cream chiffon with whatever fruit is in season. By the slice or the small round.

Muffin

One muffin at a time, rotating monthly. Blueberry in summer, apple-cinnamon in fall, cranberry-orange in winter, rhubarb in spring.

Bread

Country loaf and sourdough boule, baked Friday for Saturday. Sandwich bread — brioche or sourdough — by the loaf. Rolls by the half-dozen.

Cinnamon Rolls

Sticky, warm, glazed in cream cheese and butter. Sold one at a time, until they're gone.

Croissants are coming. Don't rush us.

Coming Soon

Pizza

Pan pizza. Focaccia-style dough — slow-fermented, baked in a pan, crisp on the bottom and tender on top.

About

Wulfbear is one of three brands under Tusky Farms. Tusky is the farm itself — bison, wood, leather, dairy. Nayurhe is the inn we're building. Wulfbear is the food.

The farm is in Niagara County. The founder is Tuscarora, Beaver Clan, Haudenosaunee. The herd, the cream, the eggs, and the butter come from this land. The donuts come from a Saturday morning. The bread comes from a Friday afternoon.

We are small on purpose. We will stay that way as long as we can.
